Ingredients

  • ½ orange
  • ½ lemon
  • 2 cloves garlic, minced
  • 1 Tbsp chopped fresh thyme (or use 1 tsp dried)
  • 1 lb chicken drumsticks
  • 1 Tbsp Jerk seasoning
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Grate zest and squeeze juice from orange and lemon halves. Combine orange and lemon zest and juices, garlic, and thyme in a large zip-top plastic bag. Add chicken; seal, turning to coat.
  2. Chill 4 hours or overnight.
  3. Preheat oven to 375°F. Remove chicken from bag, reserving marinade.
  4. Sprinkle chicken with seasoning, salt, and pepper. Place chicken on foil-lined baking sheet coated with cooking spray.
  5. Bake 35 to 40 minutes or until done, turning after 20 minutes.
  6. Meanwhile, bring reserved marinade to a boil in a small saucepan; boil 2 minutes. Drizzle over chicken.

  • 1 Tbsp olive oil
  • 1¼ cups black beans, drained and rinsed
  • ¼ cup salsa
  • 1 Tbsp chopped fresh cilantro (optional)

Side Dish Instructions

  1. Cook garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute.
  2. Combine garlic, black beans, salsa, and cilantro, if using, in a bowl; stir well.
