Baked Jerk Chicken Drumsticks

Ingredients
- ½ orange
- ½ lemon
- 2 cloves garlic, minced
- 1 Tbsp chopped fresh thyme (or use 1 tsp dried)
- 1 lb chicken drumsticks
- 1 Tbsp Jerk seasoning
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Grate zest and squeeze juice from orange and lemon halves. Combine orange and lemon zest and juices, garlic, and thyme in a large zip-top plastic bag. Add chicken; seal, turning to coat.
- Chill 4 hours or overnight.
- Preheat oven to 375°F. Remove chicken from bag, reserving marinade.
- Sprinkle chicken with seasoning, salt, and pepper. Place chicken on foil-lined baking sheet coated with cooking spray.
- Bake 35 to 40 minutes or until done, turning after 20 minutes.
- Meanwhile, bring reserved marinade to a boil in a small saucepan; boil 2 minutes. Drizzle over chicken.

- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1¼ cups black beans, drained and rinsed
- ¼ cup salsa
- 1 Tbsp chopped fresh cilantro (optional)
Side Dish Instructions
- Cook garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute.
- Combine garlic, black beans, salsa, and cilantro, if using, in a bowl; stir well.
