Zesty Chicken Salad

Ingredients
- ⅓ cup mayonnaise
- ⅓ cup dill pickle relish
- 3 Tbsp chopped shallots
- 2 Tbsp lemon juice, divided
- 1 Tbsp chopped fresh parsley
- 1 tsp dried tarragon (or use basil)
- 1½ cups chopped rotisserie chicken
- 1½ Tbsp olive oil
- ½ Tbsp Dijon mustard
- ½ Tbsp honey
- 1 (5-oz) pkg mixed baby greens
Instructions
- Whisk together mayonnaise, relish, shallots, 1 Tbsp lemon juice, parsley, and tarragon in a large bowl; stir in chicken.
- Whisk together oil, 1 Tbsp lemon juice, mustard, and honey. Add greens; toss. Divide greens among 3 serving plates; top with chicken salad.
