Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into chunks
  • 1 (10-oz) pkg frozen seasoning blend (diced bell peppers, celery, and onion)
  • 2 Tbsp olive oil
  • 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano 
  • 1 Tbsp Creole seasoning

Instructions

  1. Sauté chicken and seasoning blend in hot oil in a large, deep skillet over medium-high heat 6 minutes.
  2. Add tomatoes and Creole seasoning; simmer 6 to 8 minutes or until chicken is done and sauce is thickened.

Side Dish Ingredients

  • 1½ cups quick-cooking grits
  • 1 cup shredded Cheddar cheese
  • ¾ tsp pepper
  • ½ tsp salt

Side Dish Instructions

  1. Cook grits according to package directions. Stir in cheese, pepper, and salt.
