Mediterranean Chicken Pasta

Ingredients

  • 4 oz whole-grain penne pasta
  • ½ lb boneless, skinless chicken breasts, thinly sliced
  • 1 tsp olive oil
  • 1 cup grape tomatoes, halved
  • ½ (5-oz) pkg baby kale (or use spring mix)
  • ¼ cup pitted kalamata olives, chopped
  • 1 clove garlic, minced
  • ½ cup crumbled reduced-fat feta cheese
  • 2 Tbsp chopped fresh basil

Instructions

  1. Cook pasta according to package directions. Meanwhile, sauté chicken in hot oil in a Dutch oven over medium-high heat 5 minutes or until done.
  2. Add pasta, tomatoes, kale, olives, garlic, and seasoning to skillet; cook, stirring constantly, 3 minutes or until kale is wilted. Remove from heat; stir in cheese, basil, and salt and pepper to taste.
