Mediterranean Chicken Pasta

Ingredients
- 4 oz whole-grain penne pasta
- ½ lb boneless, skinless chicken breasts, thinly sliced
- 1 tsp olive oil
- 1 cup grape tomatoes, halved
- ½ (5-oz) pkg baby kale (or use spring mix)
- ¼ cup pitted kalamata olives, chopped
- 1 clove garlic, minced
- ½ cup crumbled reduced-fat feta cheese
- 2 Tbsp chopped fresh basil
Instructions
- Cook pasta according to package directions. Meanwhile, sauté chicken in hot oil in a Dutch oven over medium-high heat 5 minutes or until done.
- Add pasta, tomatoes, kale, olives, garlic, and seasoning to skillet; cook, stirring constantly, 3 minutes or until kale is wilted. Remove from heat; stir in cheese, basil, and salt and pepper to taste.
