Avocado Burgers
Ingredients
- 2 red bell peppers, chopped
- 1 cup frozen whole kernel corn, thawed (or use 2 ears corn)
- ½ cup chopped onion
- 1 Tbsp olive oil
- ½ tsp salt
- 4 (5.4-oz) ground beef patties
- ½ cup crushed tortilla chips with lime
- 1 tomato, chopped
- 2 small avocados, mashed
Instructions
- Preheat oven to 450°F. Toss together bell peppers, corn, onion, oil, and salt on a rimmed baking sheet.
- Place patties on a rack in a shallow roasting pan. Press chips into tops of burgers.
- Bake 20 minutes or until vegetables are beginning to brown, stirring once, and burgers are done. Stir tomato into vegetables.
- Spread avocado over burgers. Serve with salsa mixture.
