Avocado Burgers

Ingredients

  • 2 red bell peppers, chopped
  • 1 cup frozen whole kernel corn, thawed (or use 2 ears corn)
  • ½ cup chopped onion
  • 1 Tbsp olive oil
  • ½ tsp salt
  • 4 (5.4-oz) ground beef patties
  • ½ cup crushed tortilla chips with lime
  • 1 tomato, chopped 
  • 2 small avocados, mashed

Instructions

  1. Preheat oven to 450°F. Toss together bell peppers, corn, onion, oil, and salt on a rimmed baking sheet.
  2. Place patties on a rack in a shallow roasting pan. Press chips into tops of burgers.
  3. Bake 20 minutes or until vegetables are beginning to brown, stirring once, and burgers are done. Stir tomato into vegetables.
  4. Spread avocado over burgers. Serve with salsa mixture.
