Grilled Lemon-Cilantro Pork Chops
Grilled Asparagus Salad and Rolls
Ingredients
- 2 (4-oz) boneless pork loin chops, trimmed
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp lemon juice
- 1 Tbsp chopped fresh cilantro
Instructions
- Preheat grill to medium-high. Sprinkle pork with salt and pepper; grill 4 minutes per side or until pork is done. Drizzle lemon juice and sprinkle cilantro over pork.

- ½ lb asparagus, trimmed
- 2 Tbsp extra virgin olive oil
- 1 Tbsp lemon juice
- 1 small clove garlic, minced
- ⅛ tsp salt
- ⅛ tsp crushed red pepper
- 4 cups spring mix
- 2 (1.75-oz) whole wheat dinner rolls, warmed
Side Dish Instructions
- Preheat grill to medium-high heat. Coat asparagus with cooking spray; grill 8 minutes or until crisp-tender, turning occasionally. Cool and cut asparagus into 1-inch pieces.
- Whisk together oil, lemon juice, garlic, salt and red pepper in a serving bowl. Add spring mix and asparagus; toss. Serve salad and rolls alongside pork.
