Ingredients

  • 2 (4-oz) boneless pork loin chops, trimmed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp lemon juice
  • 1 Tbsp chopped fresh cilantro

Instructions

  1. Preheat grill to medium-high. Sprinkle pork with salt and pepper; grill 4 minutes per side or until pork is done. Drizzle lemon juice and sprinkle cilantro over pork.

  • ½ lb asparagus, trimmed
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp lemon juice
  • 1 small clove garlic, minced
  • ⅛ tsp salt
  • ⅛ tsp crushed red pepper
  • 4 cups spring mix
  • 2 (1.75-oz) whole wheat dinner rolls, warmed

Side Dish Instructions

  1. Preheat grill to medium-high heat. Coat asparagus with cooking spray; grill 8 minutes or until crisp-tender, turning occasionally. Cool and cut asparagus into 1-inch pieces.
  2. Whisk together oil, lemon juice, garlic, salt and red pepper in a serving bowl. Add spring mix and asparagus; toss. Serve salad and rolls alongside pork.
