Parmesan Cheese Grits with Spinach and Garlic-Cheese Biscuits

Ingredients

  • ½ (19-oz) pkg bratwurst
  • ½ (8-oz) pkg mushrooms, thinly sliced
  • 1 zucchini, thinly sliced
  • ½ onion, thinly sliced
  • 1 Tbsp olive oil
  • 1 (14.5-oz) can petite diced tomatoes with garlic

Instructions

  1. Cook sausage in a large skillet over medium heat 7 to 8 minutes per side or until done. Remove from skillet, and set aside.
  2. Cook mushrooms, zucchini, and onion in hot oil in same skillet over medium heat until vegetables are just tender.
  3. Stir in tomatoes. Bring to a boil, reduce heat, and simmer 5 minutes. Season with salt and pepper to taste. Serve vegetable mixture with sausage.

  • 1 cup instant grits
  • ½ (10-oz) pkg spinach
  • ¼ cup shredded Parmesan cheese
  • 1 (7.75-oz) pkg garlic-cheese biscuits

Side Dish Instructions

  1. Cook grits according to package directions. Gradually stir in spinach until wilted. Stir in cheese; season with salt and pepper to taste.
  2. Bake biscuits according to package directions.
