Skillet Brats and Vegetables
Parmesan Cheese Grits with Spinach and Garlic-Cheese Biscuits
Ingredients
- ½ (19-oz) pkg bratwurst
- ½ (8-oz) pkg mushrooms, thinly sliced
- 1 zucchini, thinly sliced
- ½ onion, thinly sliced
- 1 Tbsp olive oil
- 1 (14.5-oz) can petite diced tomatoes with garlic
Instructions
- Cook sausage in a large skillet over medium heat 7 to 8 minutes per side or until done. Remove from skillet, and set aside.
- Cook mushrooms, zucchini, and onion in hot oil in same skillet over medium heat until vegetables are just tender.
- Stir in tomatoes. Bring to a boil, reduce heat, and simmer 5 minutes. Season with salt and pepper to taste. Serve vegetable mixture with sausage.

- 1 cup instant grits
- ½ (10-oz) pkg spinach
- ¼ cup shredded Parmesan cheese
- 1 (7.75-oz) pkg garlic-cheese biscuits
Side Dish Instructions
- Cook grits according to package directions. Gradually stir in spinach until wilted. Stir in cheese; season with salt and pepper to taste.
- Bake biscuits according to package directions.
