Parmesan-Bacon Pasta

Ingredients

  • 1 (16-oz) pkg linguine
  • 10 slices bacon, chopped
  • 1 lb asparagus, trimmed
  • 1 pint grape tomatoes, halved
  • 1½ cups chicken broth
  • ½ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook bacon in a large skillet over medium heat until crisp; using a slotted spoon, remove bacon and drain on paper towels, reserving 2 Tbsp drippings in skillet.
  3. Add asparagus; cook 4 minutes or until asparagus is crisp tender. Remove asparagus from skillet, and keep warm.
  4. Add tomatoes and broth to skillet, scraping up any brown bits with a wooden spoon; bring to a boil, reduce heat, and simmer until broth is reduced by half. Add cheese, stirring until melted.
  5. Toss sauce mixture with pasta and bacon; divide mixture among 6 plates. Serve with asparagus.
