Garlic Butter Salmon
Farro-Arugula SaladIngredients
- 6 (6-oz) salmon fillets
- ½ tsp garlic powder
- ½ tsp salt
- 6 Tbsp butter
- 3 Tbsp chopped fresh parsley
Instructions
- Sprinkle fish with garlic powder and salt. Melt 3 Tbsp butter per batch in a large skillet over medium-high heat.
- Cook fish, skin sides up, in batches, 5 to 8 minutes or until browned. Gently flip fish, and cook 3 minutes or until fish flakes with a fork. Sprinkle with parsley.

- 1 cup quick-cooking farro
- 1 (10-oz) pkg arugula
- 2 cups sliced strawberries (or use peaches)
- ½ cup chopped walnuts
- ⅓ cup refrigerated lemon vinaigrette
Side Dish Instructions
- Cook farro according to package directions. Combine farro, arugula, strawberries, nuts, and vinaigrette; toss.
