Garlic Butter Salmon

Ingredients

  • 6 (6-oz) salmon fillets
  • ½ tsp garlic powder
  • ½ tsp salt
  • 6 Tbsp butter
  • 3 Tbsp chopped fresh parsley

Instructions

  1. Sprinkle fish with garlic powder and salt. Melt 3 Tbsp butter per batch in a large skillet over medium-high heat.
  2. Cook fish, skin sides up, in batches, 5 to 8 minutes or until browned. Gently flip fish, and cook 3 minutes or until fish flakes with a fork. Sprinkle with parsley.

  • 1 cup quick-cooking farro
  • 1 (10-oz) pkg arugula
  • 2 cups sliced strawberries (or use peaches)
  • ½ cup chopped walnuts
  • ⅓ cup refrigerated lemon vinaigrette

Side Dish Instructions

  1. Cook farro according to package directions. Combine farro, arugula, strawberries, nuts, and vinaigrette; toss.
