Ingredients

  • 1½ lb London broil (or use flank steak)
  • 1 tsp salt, divided
  • ½ tsp pepper
  • ¾ cup fresh chopped parsley
  • ¼ cup olive oil
  • ¼ cup lime juice
  • ¼ tsp crushed red pepper
  • 4 cloves garlic, halved
  • 1 avocado, quartered

Instructions

  1. Preheat grill or grill pan coated with cooking spray to medium-high heat.
  2. Sprinkle steak with ½ tsp each salt and pepper. Grill, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  3. Meanwhile, process parsley, oil, lime juice, ½ tsp salt, red pepper, and garlic in a food processor until blended. Add avocado, and pulse until slightly chunky. Serve sauce with steak.

  • 3 (3.5-oz) pouches boil-in-bag rice
  • 1 (12-oz) pkg frozen green peas
  • 3 Tbsp olive oil
  • ¼ cup chopped fresh parsley
  • ½ tsp salt

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook peas in hot oil in a large skillet over medium-high heat 7 to 8 minutes or until tender. Stir in rice, parsley, and salt.
