Ingredients
- 1½ lb London broil (or use flank steak)
- 1 tsp salt, divided
- ½ tsp pepper
- ¾ cup fresh chopped parsley
- ¼ cup olive oil
- ¼ cup lime juice
- ¼ tsp crushed red pepper
- 4 cloves garlic, halved
- 1 avocado, quartered
Instructions
- Preheat grill or grill pan coated with cooking spray to medium-high heat.
- Sprinkle steak with ½ tsp each salt and pepper. Grill, covered, 4 to 5 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, process parsley, oil, lime juice, ½ tsp salt, red pepper, and garlic in a food processor until blended. Add avocado, and pulse until slightly chunky. Serve sauce with steak.

- 3 (3.5-oz) pouches boil-in-bag rice
- 1 (12-oz) pkg frozen green peas
- 3 Tbsp olive oil
- ¼ cup chopped fresh parsley
- ½ tsp salt
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, cook peas in hot oil in a large skillet over medium-high heat 7 to 8 minutes or until tender. Stir in rice, parsley, and salt.
