Grilled Mahi Mahi with Pineapple-Soy Sauce
Paprika Grilled Sweet Potato Rounds and Cauliflower
Ingredients
- 2 (4-oz) mahi mahi fillets (or use grouper)
- ¼ cup 100% pineapple juice
- 1½ tsp low-sodium soy sauce
- ¾ tsp sugar
- Pinch of crushed red pepper
- ½ tsp grated ginger
- 1 green onion, finely chopped
Instructions
- Preheat grill to medium-high heat. Lightly coat both sides of fish with cooking spray.
- Grill fish 3 minutes per side or until fish flakes with a fork.
- Combine pineapple juice, soy sauce, sugar, and red pepper in a small saucepan, and bring to a boil over medium-high heat. Cook 1 to 2 minutes or until slightly thickened. Remove from heat, and stir in ginger.
- Top each fish fillet with sauce and onion.
Side Dish Ingredients
- 1 (10-oz) sweet potato
- 1 Tbsp canola oil
- ½ tsp paprika
- 1 (12-oz) pkg cauliflower florets
- 1 Tbsp light butter with canola oil
Side Dish Instructions
- Preheat grill to medium-high heat. Peel potato, and cut into ¼-inch-thick slices. Toss potato slices with oil, paprika, and ⅛ tsp each salt and pepper.
- Place potato slices on grill rack around edges of grill. Grill 8 minutes or until tender, turning once.
- Steam cauliflower according to package directions; toss with light butter and ⅛ tsp salt.
- Serve potatoes and cauliflower alongside fish.
