Grilled Mahi Mahi with Pineapple-Soy Sauce

Ingredients

  • 2 (4-oz) mahi mahi fillets (or use grouper)
  • ¼ cup 100% pineapple juice
  • 1½ tsp low-sodium soy sauce
  • ¾ tsp sugar
  • Pinch of crushed red pepper
  • ½ tsp grated ginger
  • 1 green onion, finely chopped

Instructions

  1. Preheat grill to medium-high heat. Lightly coat both sides of fish with cooking spray.
  2. Grill fish 3 minutes per side or until fish flakes with a fork.
  3. Combine pineapple juice, soy sauce, sugar, and red pepper in a small saucepan, and bring to a boil over medium-high heat. Cook 1 to 2 minutes or until slightly thickened. Remove from heat, and stir in ginger.
  4. Top each fish fillet with sauce and onion.

Side Dish Ingredients

  • 1 (10-oz) sweet potato
  • 1 Tbsp canola oil
  • ½ tsp paprika
  • 1 (12-oz) pkg cauliflower florets
  • 1 Tbsp light butter with canola oil

Side Dish Instructions

  1. Preheat grill to medium-high heat. Peel potato, and cut into ¼-inch-thick slices. Toss potato slices with oil, paprika, and ⅛ tsp each salt and pepper.
  2. Place potato slices on grill rack around edges of grill. Grill 8 minutes or until tender, turning once.
  3. Steam cauliflower according to package directions; toss with light butter and ⅛ tsp salt.
  4. Serve potatoes and cauliflower alongside fish.
