Chicken Caprese Salad

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut in half lengthwise
  • 2¼ tsp Montreal steak seasoning
  • 1 Tbsp olive oil
  • 1 (5-oz) pkg spring mix
  • ½ (1-oz) pkg fresh basil, chopped
  • ½ (8-oz) pkg fresh mozzarella pearls
  • 2 Roma tomatoes, thinly sliced
  • ½ cup balsamic vinaigrette

Instructions

  1. Sprinkle chicken with seasoning. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done. Let stand 5 minutes; chop.
  2. Toss together spring mix, basil, cheese, and tomatoes; divide among 3 plates.
  3. Drizzle with dressing, and top with chicken.
