Greek-Style Chicken

Feta-Parsley Pasta

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 tsp Greek seasoning
  • 2 Tbsp all-purpose flour
  • 2 Tbsp olive oil
  • 1 (14.5-oz) can diced tomatoes with Italian seasonings

Instructions

  1. Halve chicken crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with Greek seasoning; dredge in flour.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat until done. Stir in tomatoes; cook 3 minutes.

Side Dish Ingredients

  • ½ (16-oz) pkg spaghetti
  • ½ cup crumbled feta cheese
  • 2 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Cook pasta according to package directions; drain and place in a large bowl.
  2. Add cheese and parsley; toss. Season with salt and pepper to taste.
