Greek-Style Chicken
Feta-Parsley Pasta
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 1 tsp Greek seasoning
- 2 Tbsp all-purpose flour
- 2 Tbsp olive oil
- 1 (14.5-oz) can diced tomatoes with Italian seasonings
Instructions
- Halve chicken crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with Greek seasoning; dredge in flour.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat until done. Stir in tomatoes; cook 3 minutes.
Side Dish Ingredients
- ½ (16-oz) pkg spaghetti
- ½ cup crumbled feta cheese
- 2 Tbsp chopped fresh parsley
Side Dish Instructions
- Cook pasta according to package directions; drain and place in a large bowl.
- Add cheese and parsley; toss. Season with salt and pepper to taste.
