Chili and Spice Rubbed Pork Tenderloin

Mashed Sweet Potatoes and Steamed Green Beans

Ingredients

  • 1 pork tenderloin, trimmed (about 1 lb)
  • 1 Tbsp Mexican seasoning (or use fajita seasoning)
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • ½ Tbsp fresh lime juice

Instructions

  1. Preheat oven to 400°F. Rub pork with seasoning.
  2. Cook pork in hot oil in a large ovenproof skillet over medium-high heat 4 minutes per side or until browned. Transfer skillet to oven.
  3. Bake 10 minutes or until a meat thermometer inserted reads 145°F. Let stand 3 minutes before slicing.
  4. Stir together honey and lime juice; drizzle over pork.

Side Dish Ingredients

  • 1 lb sweet potatoes, peeled and cubed
  • 3 Tbsp butter
  • ¼ tsp ground cinnamon
  • ½ (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook potatoes in boiling water to cover in a Dutch oven until tender; drain and mash to desired consistency with butter and cinnamon. Season with salt and pepper to taste.
  2. Steam green beans according to package directions.
