Ingredients
- 2 (6-oz) boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1 (14.5-oz) can diced tomatoes with Italian seasoning
- ¼ cup white wine
- 1 (5-oz) pkg spinach
- ⅓ cup shredded mozzarella cheese
Instructions
- Pound chicken to an even thickenss in a zip-top plastic bag using the heel of your hand or a meat mallet. Lightly season chicken with salt and pepper.
- Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes on one side until golden.
- Turn chicken; add tomatoes and wine. Cover, and cook 5 minutes or until chicken is done. Gradually stir in spinach until wilted.
- Sprinkle chicken with cheese; cover and let stand 1 minute.
