Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 (14.5-oz) can diced tomatoes with Italian seasoning
  • ¼ cup white wine
  • 1 (5-oz) pkg spinach
  • ⅓ cup shredded mozzarella cheese

Instructions

  1. Pound chicken to an even thickenss in a zip-top plastic bag using the heel of your hand or a meat mallet. Lightly season chicken with salt and pepper.
  2. Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes on one side until golden.
  3. Turn chicken; add tomatoes and wine. Cover, and cook 5 minutes or until chicken is done. Gradually stir in spinach until wilted.
  4. Sprinkle chicken with cheese; cover and let stand 1 minute.

  • 1 (9-oz) pkg refrigerated fettuccine
  • 1 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Cook pasta according to package directions.
  2. Steam green beans according to package directions.
