Summer Gazpacho
Provolone and Caramelized Onion Grilled CheeseIngredients
- 4 tomatoes, halved
- 1 sweet onion, halved
- 1 English cucumber, cut into chunks
- 1 bell pepper (any color), cut into chunks
- 3 Tbsp red wine vinegar
- 2 cups tomato juice
- ¼ cup chopped fresh parsley
Instructions
- Pulse tomatoes, onion, cucumber, and bell pepper, in batches, in a food processor until barely chunky; transfer to a serving bowl. Stir in vinegar, tomato juice, parsley, salt, and pepper. Chill until ready to serve.

- 1 cup thinly sliced red onion
- 2 Tbsp olive oil, divided
- 1 tsp balsamic vinegar
- 12 (1-oz) slices whole-grain sandwich bread
- 12 slices provolone cheese
Side Dish Instructions
- Cook onion in ½ Tbsp hot oil in a large skillet over medium-high heat 10 minutes or until tender and browned. Add vinegar; cook 2 minutes. Remove from pan; wipe skillet clean.
- Top 6 bread slices with onion and cheese; cover with remaining bread slices. Cook sandwiches, in batches, in ½ Tbsp hot oil per batch in skillet over medium heat 3 to 4 minutes per side or until toasted and cheese is melted.
