Grilled Prosciutto, Ricotta, and Nectarine Toasts
Caprese SaladIngredients
- 12 (1-oz) slices artisan bread (preferably multigrain)
- 2 Tbsp olive oil
- 1 cup ricotta cheese
- ½ tsp pepper
- 2 Tbsp honey
- 2 nectarines, thinly sliced
- 1 (3-oz) pkg thinly sliced prosciutto
- 2 cups baby arugula
Instructions
- Preheat grill to medium-high heat; brush bread slices with oil. Grill bread 1 to 2 minutes per side or until toasted.
- Spread ricotta over each bread slice; sprinkle with pepper and drizzle with honey. Serve topped with nectarines, prosciutto, and arugula.
Side Dish Ingredients
- 6 Roma tomatoes, sliced
- 1 (8-oz) ball fresh mozzarella cheese, sliced
- 1 (1-oz) pkg basil leaves
- 2 Tbsp extra virgin olive oil
- 2 Tbsp balsamic glaze
Side Dish Instructions
- Arrange tomatoes, cheese, and basil on a serving plate, slightly overlapping; drizzle with oil and balsamic glaze. Season with salt and pepper to taste.
