Grilled Prosciutto, Ricotta, and Nectarine Toasts

Ingredients

  • 12 (1-oz) slices artisan bread (preferably multigrain)
  • 2 Tbsp olive oil
  • 1 cup ricotta cheese
  • ½ tsp pepper
  • 2 Tbsp honey
  • 2 nectarines, thinly sliced
  • 1 (3-oz) pkg thinly sliced prosciutto
  • 2 cups baby arugula

Instructions

  1. Preheat grill to medium-high heat; brush bread slices with oil. Grill bread 1 to 2 minutes per side or until toasted.
  2. Spread ricotta over each bread slice; sprinkle with pepper and drizzle with honey. Serve topped with nectarines, prosciutto, and arugula.

Side Dish Ingredients

  • 6 Roma tomatoes, sliced
  • 1 (8-oz) ball fresh mozzarella cheese, sliced
  • 1 (1-oz) pkg basil leaves
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp balsamic glaze

Side Dish Instructions

  1. Arrange tomatoes, cheese, and basil on a serving plate, slightly overlapping; drizzle with oil and balsamic glaze. Season with salt and pepper to taste.
