Lemon-Goat Cheese Chicken

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 2 lemons
  • 1 (4-oz) log herb-flavored goat cheese, cut into 6 slices
  • 2 Tbsp olive oil
  • 1 Tbsp dried parsley
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 450°F. Cut a horizontal slit in thickest portion of each breast to make a pocket. Arrange chicken on a greased rimmed baking sheet.
  2. Cut 1 lemon into 6 slices; grate zest and squeeze juice from other lemon.
  3. Stuff chicken with cheese. Whisk together oil, lemon zest, lemon juice, parsley, salt, and pepper. Drizzle chicken with oil mixture; top each with 1 lemon slice.
  4. Bake 15 to 20 minutes or until chicken is done.

Side Dish Ingredients

  • 1 (8.5-oz) pouch microwavable seven-whole-grains mix
  • 4 large carrots, shaved into ribbons (see Note)
  • 1 fennel bulb, thinly sliced
  • ¼ cup walnut pieces
  • ¼ cup dried cranberries
  • ¼ cup poppy seed dressing

Side Dish Instructions

  1. Microwave grains mix according to package directions.
  2. Toss together carrots, fennel, nuts, cranberries, and dressing in a bowl. Fold in grains mix.
