Lemon-Goat Cheese Chicken
Shaved Carrot and Grain SaladIngredients
- 6 (6-oz) boneless, skinless chicken breasts
- 2 lemons
- 1 (4-oz) log herb-flavored goat cheese, cut into 6 slices
- 2 Tbsp olive oil
- 1 Tbsp dried parsley
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 450°F. Cut a horizontal slit in thickest portion of each breast to make a pocket. Arrange chicken on a greased rimmed baking sheet.
- Cut 1 lemon into 6 slices; grate zest and squeeze juice from other lemon.
- Stuff chicken with cheese. Whisk together oil, lemon zest, lemon juice, parsley, salt, and pepper. Drizzle chicken with oil mixture; top each with 1 lemon slice.
- Bake 15 to 20 minutes or until chicken is done.
Side Dish Ingredients
- 1 (8.5-oz) pouch microwavable seven-whole-grains mix
- 4 large carrots, shaved into ribbons (see Note)
- 1 fennel bulb, thinly sliced
- ¼ cup walnut pieces
- ¼ cup dried cranberries
- ¼ cup poppy seed dressing
Side Dish Instructions
- Microwave grains mix according to package directions.
- Toss together carrots, fennel, nuts, cranberries, and dressing in a bowl. Fold in grains mix.
