Caesar Chicken

Summery Romaine Salad

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 1 cup creamy Caesar dressing
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Place chicken in a greased baking dish; drizzle with dressing.
  2. Bake 15 minutes. Sprinkle with cheese, and bake 5 minutes longer or until chicken is done and cheese melts.

Side Dish Ingredients

  • 3 slices center cut bacon, chopped
  • 3 ears corn
  • 1 (10-oz) pkg chopped romaine lettuce
  • 3 tomatoes, chopped
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Remove bacon from skillet, reserving drippings in skillet.
  2. Cut corn kernels from cobs; discard cobs. Add corn to same skillet; cook 5 minutes or until lightly browned.
  3. Toss together romaine, tomatoes, bacon, corn, and vinaigrette in a large bowl.
