Caesar Chicken
Summery Romaine Salad
Ingredients
- 2 lb boneless, skinless chicken thighs
- 1 cup creamy Caesar dressing
- 1 cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 400°F. Place chicken in a greased baking dish; drizzle with dressing.
- Bake 15 minutes. Sprinkle with cheese, and bake 5 minutes longer or until chicken is done and cheese melts.
Side Dish Ingredients
- 3 slices center cut bacon, chopped
- 3 ears corn
- 1 (10-oz) pkg chopped romaine lettuce
- 3 tomatoes, chopped
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Remove bacon from skillet, reserving drippings in skillet.
- Cut corn kernels from cobs; discard cobs. Add corn to same skillet; cook 5 minutes or until lightly browned.
- Toss together romaine, tomatoes, bacon, corn, and vinaigrette in a large bowl.
