Ingredients

  • 1 (3.5-oz) pkg boil-in-bag brown rice
  • ½ (12-oz) pkg frozen corn kernels
  • ½ tsp ground cumin
  • 1 Tbsp olive oil
  • 1 (15-oz) can black beans, drained and rinsed
  • ¾ cup sour cream
  • ¾ cup fresh salsa (or use other salsa)
  • 1 green onion, sliced

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook corn and cumin in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Add beans, and cook 3 minutes or until thoroughly heated.
  3. Serve corn mixture over rice; top with sour cream, salsa, and onion.
