Ingredients
- 1 cup uncooked bulgur wheat
- ½ cup fresh lemon juice
- ¼ cup extra virgin olive oil
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 4 (5-oz) cans wild-caught albacore tuna
- 1 pint grape tomatoes, halved
- 1 seedless cucumber, diced
- 1 cup chopped fresh parsley
- ½ cup chopped green onions
Instructions
- Cover bulgur with 1 cup boiling water in a small bowl; set aside for 20 minutes.
- Meanwhile, whisk together lemon juice, oil, garlic, salt and pepper.
- Combine bulgur, tuna, tomatoes, cucumber, parsley and green onions in a large bowl.
- Drizzle with dressing. Toss to coat.
- Chill until ready to serve.
