Ingredients

  • 1 cup uncooked bulgur wheat
  • ½ cup fresh lemon juice
  • ¼ cup extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 4 (5-oz) cans wild-caught albacore tuna
  • 1 pint grape tomatoes, halved
  • 1 seedless cucumber, diced
  • 1 cup chopped fresh parsley
  • ½ cup chopped green onions

Instructions

  1. Cover bulgur with 1 cup boiling water in a small bowl; set aside for 20 minutes.
  2. Meanwhile, whisk together lemon juice, oil, garlic, salt and pepper.
  3. Combine bulgur, tuna, tomatoes, cucumber, parsley and green onions in a large bowl.
  4. Drizzle with dressing. Toss to coat.
  5. Chill until ready to serve.
