Spicy Orange Glazed Tofu
Sesame Noodles with Stir-Fry VegetablesIngredients
- 2 (14-oz) pkg extra-firm tofu
- ¾ cup orange juice
- 2 Tbsp soy sauce
- ¼ tsp crushed red pepper
- 1 Tbsp olive oil
- 3 green onions, thinly sliced
Instructions
- Place tofu on several layers of paper towels. Cover with additional paper towels, and gently press out moisture. Let stand 15 minutes. Cut into cubes.
- Bring orange juice, soy sauce, and crushed red pepper to a simmer in a sauce saucepan over high heat. Simmer 4 minutes or until syrupy.
- Meanwhile, cook tofu in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until golden brown. Toss orange mixture with tofu; serve sprinkled with onions.
Side Dish Ingredients
- ½ (16-oz) pkg whole-grain spaghetti
- 1 (8-oz) pkg snow peas
- 1 (10-oz) pkg shredded carrots
- 1 Tbsp sesame oil
- 2 Tbsp soy sauce
- 1 Tbsp toasted sesame seeds
Side Dish Instructions
- Cook pasta according to package directions, adding peas and carrots during last 3 minutes of cooking. Drain; transfer to a serving bowl. Stir in remaining ingredients, and toss.
