Ingredients

  • 1½ cups cubed seedless watermelon
  • 1½ cups cubed cantaloupe
  • 2 Tbsp fresh mint leaves
  • 1 Tbsp fresh lemon juice
  • 2 tsp extra virgin olive oil
  • 3 cups baby arugula
  • ¼ cup chopped walnuts
  • ½ (4-oz) pkg thinly sliced prosciutto
  • ½ (8-oz) ball fresh mozzarella cheese, torn into pieces

Instructions

  1. Toss together watermelon, cantaloupe, mint, lemon juice, and oil in a large bowl.
  2. Arrange arugula on a platter; top with melon mixture. Sprinkle with nuts; top with prosciutto and cheese.
