Grilled Cajun Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 1 Tbsp Cajun seasoning
  • ¼ tsp garlic powder

Instructions

  1. Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Rub with oil; sprinkle with Cajun seasoning and garlic powder.
  2. Grill chicken on greased grill rack, covered, 5 to 6 minutes per side or until done.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen breaded okra
  • 1 tomato, sliced
  • 1 (8-oz) pkg cornbread mix

Side Dish Instructions

  1. Fry or bake okra according to package directions.
  2. Season tomato lightly with salt and pepper.
  3. Bake cornbread according to package directions.
