Prosciutto Tortilla Pizzas
Arugula Salad
Ingredients
- 6 burrito-size flour tortillas
- 2 Tbsp olive oil
- 1 Tbsp minced garlic
- 1 (8-oz) pkg fresh mozzarella cheese, torn into pieces
- 1 (4-oz) pkg prosciutto
Instructions
- Preheat oven to 450°F. Place tortillas on two baking sheets. Brush with oil and sprinkle with garlic; bake 5 minutes.
- Top each tortilla with cheese and bake 5 minutes or until cheese is melted and tortillas are crisp. Arrange prosciutto over pizzas. Top with Arugula Salad recipe, if desired.
Side Dish Ingredients
- 1 (5-oz) pkg arugula
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
Side Dish Instructions
- Toss together all ingredients just before serving; season with salt and pepper to taste.
