Prosciutto Tortilla Pizzas

Ingredients

  • 6 burrito-size flour tortillas
  • 2 Tbsp olive oil
  • 1 Tbsp minced garlic
  • 1 (8-oz) pkg fresh mozzarella cheese, torn into pieces
  • 1 (4-oz) pkg prosciutto

Instructions

  1. Preheat oven to 450°F. Place tortillas on two baking sheets. Brush with oil and sprinkle with garlic; bake 5 minutes.
  2. Top each tortilla with cheese and bake 5 minutes or until cheese is melted and tortillas are crisp. Arrange prosciutto over pizzas. Top with Arugula Salad recipe, if desired.

Side Dish Ingredients

  • 1 (5-oz) pkg arugula
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Toss together all ingredients just before serving; season with salt and pepper to taste.
