Cheesy Mushroom Chicken

Ingredients

  • 2 Tbsp butter, divided
  • 1 lb boneless, skinless chicken breasts, cut in half lengthwise 
  • ½ (8-oz) pkg whole mushrooms, sliced
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp balsamic vinegar
  • ½ tsp dried thyme
  • ½ cup shredded mozzarella cheese

Instructions

  1. Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat. Add chicken, and cook 5 to 6 minutes per side or until done. Remove from skillet, and keep warm.
  2. Melt 1 Tbsp butter in skillet over medium-high heat. Add mushrooms, salt, and pepper; cook until browned and tender.
  3. Add broth, vinegar, and thyme; bring to a boil, reduce heat, and simmer 5 minutes or until liquid is slightly reduced.
  4. Add chicken; sprinkle with cheese. Cover and let stand 2 minutes or until cheese is melted.

Side Dish Ingredients

  • ¾ lb green beans, trimmed
  • ½ (7-oz) jar roasted red bell peppers, drained and sliced
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Steam green beans in a steamer basket over boiling water 6 minutes or until tender.
  2. Place green beans and pepper strips in a bowl; toss with oil, salt, and pepper.
