Maple-Mustard Chicken Breasts

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ½ cup olive oil, divided
  • 2 Tbsp Dijon mustard
  • 1½ Tbsp maple syrup
  • 1 Tbsp red wine vinegar

Instructions

  1. Preheat oven to 450°F. Cook chicken, in 2 batches, in 1 Tbsp hot per batch in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until browned; arrange on a baking sheet.
  2. Whisk together 6 Tbsp oil, mustard, syrup, and vinegar. Reserve ¼ cup mustard mixture; brush remaining mixture over chicken.
  3. Bake 15 to 20 minutes or until done. Serve with reserved sauce.

  • 2 heads broccoli, cut into spears
  • 2 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame seeds
  • ¼ tsp crushed red pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Combine all ingredients on a rimmed baking sheet; spread in a single layer. Roast 14 minutes or until well browned, stirring once during last 2 minutes of cooking.
