Maple-Mustard Chicken Breasts

Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- ½ cup olive oil, divided
- 2 Tbsp Dijon mustard
- 1½ Tbsp maple syrup
- 1 Tbsp red wine vinegar
Instructions
- Preheat oven to 450°F. Cook chicken, in 2 batches, in 1 Tbsp hot per batch in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until browned; arrange on a baking sheet.
- Whisk together 6 Tbsp oil, mustard, syrup, and vinegar. Reserve ¼ cup mustard mixture; brush remaining mixture over chicken.
- Bake 15 to 20 minutes or until done. Serve with reserved sauce.

- 2 heads broccoli, cut into spears
- 2 Tbsp sesame oil
- 1 Tbsp minced garlic
- 1 Tbsp sesame seeds
- ¼ tsp crushed red pepper
Side Dish Instructions
- Preheat oven to 450°F. Combine all ingredients on a rimmed baking sheet; spread in a single layer. Roast 14 minutes or until well browned, stirring once during last 2 minutes of cooking.
