Veggie-Beef Sloppy Joe Lettuce Wraps

Ingredients

  • 1½ lb ground sirloin (or use ground chicken or ground turkey)
  • 2 carrots, shredded
  • 2 green bell peppers, chopped
  • 1 large onion, chopped
  • 1 (6-oz) can tomato paste
  • ½ cup low-sodium chicken broth
  • 1 Tbsp Montreal steak seasoning
  • 1 tsp dry mustard
  • 1 tsp apple cider vinegar
  • 12 leaves Bibb or butter lettuce (from 2 heads)

Instructions

  1. Cook beef, carrots, bell peppers, and onion in a large nonstick skillet over medium heat 6 minutes or until beef is browned; drain.
  2. Stir together tomato paste, broth, seasoning, mustard, and vinegar in skillet.
  3. Return beef to skillet; cook 8 minutes or until sauce thickens.
  4. Spoon beef mixture onto lettuce leaves; roll up.

  • 1 (20-oz) pkg frozen sweet potato fries

Side Dish Instructions

  1. Bake fries according to package directions.
