Veggie-Beef Sloppy Joe Lettuce Wraps
Sweet Potato Fries
Ingredients
- 1½ lb ground sirloin (or use ground chicken or ground turkey)
- 2 carrots, shredded
- 2 green bell peppers, chopped
- 1 large onion, chopped
- 1 (6-oz) can tomato paste
- ½ cup low-sodium chicken broth
- 1 Tbsp Montreal steak seasoning
- 1 tsp dry mustard
- 1 tsp apple cider vinegar
- 12 leaves Bibb or butter lettuce (from 2 heads)
Instructions
- Cook beef, carrots, bell peppers, and onion in a large nonstick skillet over medium heat 6 minutes or until beef is browned; drain.
- Stir together tomato paste, broth, seasoning, mustard, and vinegar in skillet.
- Return beef to skillet; cook 8 minutes or until sauce thickens.
- Spoon beef mixture onto lettuce leaves; roll up.

- 1 (20-oz) pkg frozen sweet potato fries

- Bake fries according to package directions.
