Loaded Buffalo Chicken Nachos

Ingredients

  • 2 cups shredded rotisserie chicken
  • 5 Tbsp buffalo wing sauce, divided
  • ½ (11-oz) pkg tortilla chips
  • 1 cup canned black beans, drained and rinsed
  • 1 (8-oz) pkg shredded Monterey Jack cheese
  • ½ (8-oz) carton sour cream
  • 1 avocado, chopped

Instructions

  1. Preheat oven to 400°F. Stir together chicken and 3 Tbsp wing sauce in a bowl. Arrange half of chips in a single layer on a parchment-lined baking sheet.
  2. Top with half of chicken mixture, half of beans, and half of cheese; repeat layers. Bake 10 to 15 minutes or until cheese is melted.
  3. Meanwhile, stir together sour cream and 2 Tbsp wing sauce. Drizzle over baked nachos; top with avocado.

  • 1 lime, halved
  • ½ cantaloupe, sliced

Side Dish Instructions

  1. Squeeze limes over cantaloupe slices.
