Avocado-Salmon Rice Bowls

Ingredients

  • 2 (6-oz) salmon fillets
  • ¼ tsp salt
  • ⅛ tsp garlic powder
  • ½ cup instant brown rice
  • 1 lime
  • 1 avocado, sliced
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 450°F. Place fish on a rimmed baking sheet; sprinkle with salt and garlic powder. Bake 12 to 15 minutes or until fish flakes with a fork.
  2. Meanwhile, cook rice according to package directions.
  3. Squeeze juice from ½ lime; cut remaining half into wedges. Toss lime juice with avocado. Divide rice between bowls. Top with fish, avocado, and cilantro; serve with lime wedges.
