Avocado-Salmon Rice Bowls
Ingredients
- 2 (6-oz) salmon fillets
- ¼ tsp salt
- ⅛ tsp garlic powder
- ½ cup instant brown rice
- 1 lime
- 1 avocado, sliced
- 2 Tbsp chopped fresh cilantro
Instructions
- Preheat oven to 450°F. Place fish on a rimmed baking sheet; sprinkle with salt and garlic powder. Bake 12 to 15 minutes or until fish flakes with a fork.
- Meanwhile, cook rice according to package directions.
- Squeeze juice from ½ lime; cut remaining half into wedges. Toss lime juice with avocado. Divide rice between bowls. Top with fish, avocado, and cilantro; serve with lime wedges.
