Chicken Sandwiches with Spicy Basil Mayonnaise
Potato Chips and Chilled GrapesIngredients
- 2 lb boneless skinless chicken breasts
- 1 Tbsp Montreal chicken seasoning
- 6 sub rolls, split
- 1 cup Sriracha mayonnaise
- 1 (8-oz) pkg shredded lettuce
Instructions
- Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with seasoning.
- Grill chicken, covered, 6 minutes per side or until done.
- Let stand 5 minutes; thinly slice. Meanwhile, grill rolls, cut sides down, 1 minute or until toasted.
- Spread mayonnaise mixture over cut sides of rolls; top with chicken and lettuce. Cover with roll tops.

- 1 (8-oz) bag potato chips
- 1 lb seedless grapes, chilled
