Chicken Sandwiches with Spicy Basil Mayonnaise

Ingredients

  • 2 lb boneless skinless chicken breasts
  • 1 Tbsp Montreal chicken seasoning
  • 6 sub rolls, split
  • 1 cup Sriracha mayonnaise
  • 1 (8-oz) pkg shredded lettuce

Instructions

  1. Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with seasoning.
  2. Grill chicken, covered, 6 minutes per side or until done.
  3. Let stand 5 minutes; thinly slice. Meanwhile, grill rolls, cut sides down, 1 minute or until toasted.
  4. Spread mayonnaise mixture over cut sides of rolls; top with chicken and lettuce. Cover with roll tops.

Side Dish Ingredients

  • 1 (8-oz) bag potato chips
  • 1 lb seedless grapes, chilled

Side Dish Instructions

  1. Serve chips and grapes alongside sandwiches.
