Jerk Cod with Cilantro Butter
Avocado-Walnut Salad
Ingredients
- 1 Tbsp Caribbean Jerk seasoning
- 2 (6-oz) frozen cod fillets, thawed and patted dry
- ½ Tbsp olive oil
- 3 Tbsp butter, softened
- 2 Tbsp chopped fresh cilantro
Instructions
- Preheat oven to 400°F. Rub Jerk seasoning on both sides of fish. Place on a baking sheet rubbed with oil.
- Bake 15 to 18 minutes or until fish flakes with a fork.
- Stir together butter and cilantro in a small bowl; spoon over warm fish.
Side Dish Ingredients
- ½ (18-oz) pkg chopped romaine lettuce
- ½ avocado, diced
- 1 stalk celery, diced
- 2 Tbsp chopped walnuts
- 3 Tbsp olive-oil vinaigrette
Side Dish Instructions
- Toss together lettuce, avocado, celery, and nuts in a bowl. Drizzle with dressing; toss.
