Jerk Cod with Cilantro Butter

Ingredients

  • 1 Tbsp Caribbean Jerk seasoning
  • 2 (6-oz) frozen cod fillets, thawed and patted dry
  • ½ Tbsp olive oil
  • 3 Tbsp butter, softened
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 400°F. Rub Jerk seasoning on both sides of fish. Place on a baking sheet rubbed with oil.
  2. Bake 15 to 18 minutes or until fish flakes with a fork.
  3. Stir together butter and cilantro in a small bowl; spoon over warm fish.

Side Dish Ingredients

  • ½ (18-oz) pkg chopped romaine lettuce
  • ½ avocado, diced
  • 1 stalk celery, diced
  • 2 Tbsp chopped walnuts
  • 3 Tbsp olive-oil vinaigrette

Side Dish Instructions

  1. Toss together lettuce, avocado, celery, and nuts in a bowl. Drizzle with dressing; toss.
