Garlic-Honey Broiled Lamb Chops

Ingredients

  • 3 cloves garlic, minced
  • ¼ cup raw honey
  • 2 Tbsp chopped fresh rosemary (or use 2 Tbsp dried)
  • 1 Tbsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • 12 (3-oz) lamb loin chops, trimmed

Instructions

  1. Whisk together garlic, honey, rosemary, lemon juice, salt, and pepper in a zip-top freezer bag. Add lamb, and seal bag; chill 2 hours or overnight.
  2. Preheat broiler. Arrange lamb in a single layer on a broiler pan. Broil 4 minutes per side or to desired doneness.

Side Dish Ingredients

  • 2 large fennel bulbs, halved and thinly sliced
  • 1 red onion, thinly sliced
  • 4 oranges, peeled and sectioned
  • ¼ cup extra virgin olive oil
  • 2 Tbsp apple cider vinegar

Side Dish Instructions

  1. Toss together all ingredients in a bowl. Season with salt and pepper to taste.
