Steak with Basil-Blue Cheese Butter
Sweet Potatoes and Steamed Green Beans
Ingredients
- 2 lb top sirloin steak, trimmed (about 1½ inches thick)
- ½ tsp freshly ground pepper
- ¼ cup butter, softened
- 4 oz blue cheese, crumbled
- 2 Tbsp chopped fresh basil
Instructions
- Preheat grill to medium-high heat. Grill steak, covered, 8 to 9 minutes per side or to desired doneness, watching for flare-ups. Cover with foil, and let steak stand 5 to 10 minutes; cut into 6 serving-size portions.
- Meanwhile, combine butter, cheese, and basil, stirring until blended. Smear blue cheese butter on steaks.
Side Dish Ingredients
- 3 organic sweet potatoes
- 1 tsp salt, divided
- 1 tsp freshly ground pepper, divided
- 1½ lb green beans, trimmed
Side Dish Instructions
- Preheat oven to 425°F. Bake potatoes 30 minutes or until tender; cool slightly, and halve each potato lengthwise. Sprinkle with ½ tsp each salt and pepper.
- Steam beans in a steamer basket over simmering water 5 minutes or until crisp-tender. Sprinkle beans with ½ tsp each salt and pepper.
