Steak with Basil-Blue Cheese Butter

Sweet Potatoes and Steamed Green Beans

Ingredients

  • 2 lb top sirloin steak, trimmed (about 1½ inches thick)
  • ½ tsp freshly ground pepper
  • ¼ cup butter, softened
  • 4 oz blue cheese, crumbled
  • 2 Tbsp chopped fresh basil

Instructions

  1. Preheat grill to medium-high heat. Grill steak, covered, 8 to 9 minutes per side or to desired doneness, watching for flare-ups. Cover with foil, and let steak stand 5 to 10 minutes; cut into 6 serving-size portions.
  2. Meanwhile, combine butter, cheese, and basil, stirring until blended. Smear blue cheese butter on steaks.

Side Dish Ingredients

  • 3 organic sweet potatoes
  • 1 tsp salt, divided
  • 1 tsp freshly ground pepper, divided
  • 1½ lb green beans, trimmed

Side Dish Instructions

  1. Preheat oven to 425°F. Bake potatoes 30 minutes or until tender; cool slightly, and halve each potato lengthwise. Sprinkle with ½ tsp each salt and pepper.
  2. Steam beans in a steamer basket over simmering water 5 minutes or until crisp-tender. Sprinkle beans with ½ tsp each salt and pepper.
