Seared Flounder
Sun-Dried Tomato Pilaf and Green Beans
Ingredients
- 6 (4-oz) flounder fillets
- ¼ cup olive oil
- 1 (5.3-oz) carton plain Greek yogurt
- 3 Tbsp chopped fresh dill
- 2 Tbsp lemon juice
Instructions
- Lightly sprinkle fish with salt and pepper. Cook fish, in batches if necessary, in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
- Combine yogurt, dill, lemon juice, and salt and pepper to taste in a serving bowl; serve over fish. Sprinkle with extra dill, if desired.
Side Dish Ingredients
- 1½ cups long-grain brown rice
- ½ cup sun-dried tomatoes in oil, chopped
- 2 (12-oz) pkg green beans
- 1 tsp extra virgin olive oil
Side Dish Instructions
- Cook rice according to package directions; toss with tomatoes and salt and pepper to taste.
- Meanwhile, cook green beans according to package directions; toss with oil and salt and pepper to taste. Serve rice and green beans alongside fish.
