Parmesan-Baked Salmon

Sautéed Vegetables and Lemon Couscous

Ingredients

  • 6 (6-oz) salmon fillets
  • ⅓ cup olive oil mayonnaise
  • 2 tsp Dijon mustard
  • 2 Tbsp finely chopped fresh parsley
  • ¾ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 450°F. Arrange salmon in a greased baking dish; sprinkle with ¼ tsp salt. Combine mayonnaise, mustard, and parsley; spread over salmon. Bake 10 to 12 minutes or until fish flakes with a fork.
  2. Remove salmon from oven; sprinkle with cheese. Increase oven temperature to broil. Broil salmon 1 minute or until cheese is browned and bubbly.

Side Dish Ingredients

  • 1 (10-oz) pkg couscous
  • 1 lemon
  • 3 large zucchini, cut into half moons
  • 3 red bell peppers, cut into strips
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Cook couscous according to package directions. Grate zest and squeeze juice from lemon. Toss couscous with lemon zest, lemon juice, and salt and pepper to taste.
  2. Meanwhile, cook zucchini and bell peppers in hot oil in a large skillet over medium-high heat 7 minutes or until crisp-tender; season with salt and pepper to taste. Serve vegetables and couscous alongside salmon.
