Parmesan-Baked Salmon
Sautéed Vegetables and Lemon CouscousIngredients
- 6 (6-oz) salmon fillets
- ⅓ cup olive oil mayonnaise
- 2 tsp Dijon mustard
- 2 Tbsp finely chopped fresh parsley
- ¾ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 450°F. Arrange salmon in a greased baking dish; sprinkle with ¼ tsp salt. Combine mayonnaise, mustard, and parsley; spread over salmon. Bake 10 to 12 minutes or until fish flakes with a fork.
- Remove salmon from oven; sprinkle with cheese. Increase oven temperature to broil. Broil salmon 1 minute or until cheese is browned and bubbly.
Side Dish Ingredients
- 1 (10-oz) pkg couscous
- 1 lemon
- 3 large zucchini, cut into half moons
- 3 red bell peppers, cut into strips
- 2 Tbsp olive oil
Side Dish Instructions
- Cook couscous according to package directions. Grate zest and squeeze juice from lemon. Toss couscous with lemon zest, lemon juice, and salt and pepper to taste.
- Meanwhile, cook zucchini and bell peppers in hot oil in a large skillet over medium-high heat 7 minutes or until crisp-tender; season with salt and pepper to taste. Serve vegetables and couscous alongside salmon.
