Greek Chicken Kabobs

Ingredients
- 1½ lb boneless, skinless chicken breasts, cubed
- 2 large bell peppers (any color), cut into 1-inch pieces
- 1 large onion, cut into 1-inch pieces
- 1 (16-oz) pkg whole mushrooms
- ⅔ cup balsamic vinaigrette
- 1 Tbsp chopped fresh oregano
- 1 (16-oz) container refrigerated tzatziki sauce
Instructions
- Preheat grill or grill pan to medium-high heat. Alternately thread chicken, bell peppers, onion, and mushrooms onto metal or soaked bamboo skewers. Combine vinaigrette and oregano; brush over kabobs.
- Grill kabobs, covered, 4 to 5 minutes per side or until chicken is done and vegetables are tender, basting with vinaigrette mixture.
- Lightly sprinkle kabobs with salt and pepper; serve with tzatziki sauce.

- 1½ cups long-grain brown rice
- 1 Tbsp extra virgin olive oil
- ¼ cup chopped fresh parsley
Side Dish Instructions
- Cook rice according to package directions; toss with oil, parsley, and salt and pepper to taste .
