Greek Chicken Kabobs

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cubed
  • 2 large bell peppers (any color), cut into 1-inch pieces
  • 1 large onion, cut into 1-inch pieces
  • 1 (16-oz) pkg whole mushrooms
  • ⅔ cup balsamic vinaigrette
  • 1 Tbsp chopped fresh oregano
  • 1 (16-oz) container refrigerated tzatziki sauce

Instructions

  1. Preheat grill or grill pan to medium-high heat. Alternately thread chicken, bell peppers, onion, and mushrooms onto metal or soaked bamboo skewers. Combine vinaigrette and oregano; brush over kabobs.
  2. Grill kabobs, covered, 4 to 5 minutes per side or until chicken is done and vegetables are tender, basting with vinaigrette mixture.
  3. Lightly sprinkle kabobs with salt and pepper; serve with tzatziki sauce.

Side Dish Ingredients

  • 1½ cups long-grain brown rice
  • 1 Tbsp extra virgin olive oil
  • ¼ cup chopped fresh parsley

Side Dish Instructions

  1. Cook rice according to package directions; toss with oil, parsley, and salt and pepper to taste .
