Asian Ground Beef and Broccoli

Ingredients

  • 1½ lb ground beef
  • 1 Tbsp minced garlic
  • ¼ tsp crushed red pepper
  • 1 cup low-sodium chicken broth
  • 6 Tbsp low-sodium soy sauce
  • 2 Tbsp sesame oil
  • 2 Tbsp cornstarch
  • 1 (12-oz) pkg frozen broccoli florets
  • 1 (8-oz) can sliced water chestnuts, drained

Instructions

  1. Cook beef, garlic, and red pepper in a large skillet over medium heat until beef is browned and crumbly. Drain; return to skillet.
  2. Whisk together broth, soy sauce, oil, and cornstarch. Add to skillet with broccoli and water chestnuts.
  3. Cook, stirring occasionally, until sauce is thickened and broccoli is tender. Serve over Sesame Cauliflower Rice recipe.

  • 2 (10-oz) pkg frozen riced cauliflower
  • 2 cloves garlic, minced
  • 3 Tbsp sesame oil
  • 4 green onions, chopped
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Cook cauliflower and garlic in hot oil in a large skillet 5 minutes, stirring often, until cauliflower is crisp-tender.
  2. Stir in onions and salt; cook 1 minute or until thoroughly heated.
