Grilled Salmon with Sour Cream-Dill Sauce

Ingredients

  • 2 lemons
  • 2 Tbsp olive oil, divided
  • 2 Tbsp minced garlic
  • ½ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1½ lb salmon
  • ½ cup sour cream
  • 1 Tbsp minced fresh dill (or use 1 tsp dried)
  • 1½ tsp garlic powder
  • 1 tsp honey

Instructions

  1. Preheat grill to medium-high heat. Grate 2 tsp zest and squeeze ¼ cup juice from lemons.
  2. Whisk together 1 tsp lemon zest, 2 Tbsp lemon juice, 1 Tbsp oil, garlic, ¼ tsp salt, and ⅛ tsp pepper; brush over fish.
  3. Grill fish, covered, 6 minutes per side or until fish flakes with a fork.
  4. Stir together 1 tsp lemon zest, 2 Tbsp lemon juice, 1 Tbsp oil, sour cream, dill, garlic powder, ¼ tsp salt, ⅛ tsp pepper, and honey. Serve with fish.

  • 3 Tbsp minced garlic
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup chopped fresh parsley

Side Dish Instructions

  1. Preheat oven to 425°F. Cut carrots into 3-inch sticks. Toss carrots, garlic, oil, lemon juice, salt, and pepper on a greased rimmed baking sheet; spread in a single layer.
  2. Bake 20 to 25 minutes or until tender; toss with parsley.
