Bacon "Hash" with Eggs

Ingredients
- 8 slices bacon
- 1 (12-oz) pkg frozen riced cauliflower
- 1 onion, diced
- 1 red bell pepper, diced
- 8 large eggs, lightly beaten
- ¼ cup shredded Mexican-blend cheese
Instructions
- Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp, turning occasionally; drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
- Add cauliflower, onion, and bell pepper to hot drippings. Cook over medium heat 8 to 10 minutes or until tender and browned, stirring occasionally.
- Sprinkle cheese and bacon over cauliflower; remove from heat.
- Cook eggs in a nonstick skillet over medium heat, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
- Serve scrambled eggs with bacon "hash.".
