Bacon "Hash" with Eggs

Ingredients

  • 8 slices bacon
  • 1 (12-oz) pkg frozen riced cauliflower
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 8 large eggs, lightly beaten
  • ¼ cup shredded Mexican-blend cheese

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat 5 to 6 minutes or until crisp, turning occasionally; drain, reserving 2 Tbsp drippings in skillet. Crumble bacon.
  2. Add cauliflower, onion, and bell pepper to hot drippings. Cook over medium heat 8 to 10 minutes or until tender and browned, stirring occasionally.
  3. Sprinkle cheese and bacon over cauliflower; remove from heat.
  4. Cook eggs in a nonstick skillet over medium heat, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
  5. Serve scrambled eggs with bacon "hash.".
