Egg and Cheese Breakfast Burritos

Ingredients
- 10 large eggs
- 2 Tbsp heavy cream
- ½ tsp salt
- 2 Tbsp butter
- 4 low-carb, soft taco-size flour tortillas
- 1 cup shredded Mexican-blend cheese
Instructions
- Whisk together eggs, cream, and salt in a large bowl.
- Melt butter in a large nonstick skillet over medium heat; add eggs to skillet. Cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
- Heat tortillas in microwave 10 to 20 seconds. Spoon scrambled eggs down center of warm tortillas; top with cheese. Fold bottom of each tortilla over filling, and roll up burrito style.
