Chorizo Scrambled Eggs

Ingredients

  • 6 oz ground chorizo sausage
  • ½ cup finely chopped onion
  • ½ cup chopped green bell pepper
  • 8 large eggs
  • ½ tsp garlic salt 
  • ½ cup shredded Cheddar-Jack cheese
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook chorizo in a large skillet over medium heat 5 minutes or until browned and crumbly. Add onion and bell pepper; sauté 4 minutes or until tender.
  2. Whisk together eggs and garlic salt. Add to skillet; stir constantly until eggs begin to set but are still moist.
  3. Sprinkle cheese and cilantro over eggs before serving.
