Ingredients
- 1 (16-oz) pkg orzo
- 1 lb asparagus, cut into 2-inch pieces
- 1 (15-oz) pkg frozen sweet peas
- ¾ cup refrigerated lemon vinaigrette
- 1 pint grape tomatoes, halved
- ¾ cup sliced roasted almonds
- ¼ cup chopped fresh parsley
- 2 Tbsp chopped fresh mint
Instructions
- Cook orzo according to package directions, adding asparagus and peas during last minute of cooking.
- Drain and rinse under cold water to cool. Toss together orzo mixture and vinaigrette in a serving bowl. Stir in tomatoes, nuts, parsley, and mint.
