Turkey and Waffle Monte Cristo Sandwiches

Ingredients

  • 4 slices bacon
  • ⅓ cup raspberry jam (or use strawberry jam, jelly, or preserves)
  • 4 frozen waffles
  • ¼ lb thin sliced deli turkey
  • 4 slices mozzarella cheese
  • 1 large egg
  • 2 Tbsp milk
  • 2 Tbsp butter
  • Powdered sugar (optional)

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat until crisp; drain on paper towels, and wipe skillet clean.
  2. Spread raspberry jam over 1 side of each waffle. Top with turkey, bacon, and cheese; cover with remaining waffles, jam side down, to make sandwiches.
  3. Whisk together egg and milk in a shallow dish.
  4. Melt butter in same skillet over medium heat. Dip sandwiches in egg mixture to coat, letting excess drip off.
  5. Add sandwiches to skillet; cook 3 to 4 minutes per side or until waffles are toasted and cheese is melted. Cut sandwiches in half; sprinkle with powdered sugar, if desired.
