Black-Eyed Pea Cakes

Ingredients

  • 1 (15-oz) can no-salt-added black-eyed peas, drained and rinsed
  • ¾ cup panko breadcrumbs
  • ¼ cup finely chopped red onion
  • 2 large egg whites
  • ½ tsp dried thyme
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 2 green onions, chopped

Instructions

  1. Mash peas using a potato masher in a large bowl; stir in panko, red onion, egg whites, thyme, garlic, salt, and pepper; shape into 4 patties, and chill 10 minutes.
  2. Cook patties in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned and thoroughly heated. Serve sprinkled with green onions.

  • ½ lb asparagus, trimmed
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp apple cider vinegar
  • ⅛ tsp salt

Side Dish Instructions

  1. Wrap asparagus in damp paper towels and place in a microwave-safe dish. Microwave at HIGH power 4 to 5 minutes or until crisp-tender. Serve drizzled with oil and vinegar; sprinkle with salt.
