Black-Eyed Pea Cakes
Steamed Asparagus
Ingredients
- 1 (15-oz) can no-salt-added black-eyed peas, drained and rinsed
- ¾ cup panko breadcrumbs
- ¼ cup finely chopped red onion
- 2 large egg whites
- ½ tsp dried thyme
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- 2 green onions, chopped
Instructions
- Mash peas using a potato masher in a large bowl; stir in panko, red onion, egg whites, thyme, garlic, salt, and pepper; shape into 4 patties, and chill 10 minutes.
- Cook patties in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned and thoroughly heated. Serve sprinkled with green onions.

- ½ lb asparagus, trimmed
- 1 Tbsp extra virgin olive oil
- 1 Tbsp apple cider vinegar
- ⅛ tsp salt
Side Dish Instructions
- Wrap asparagus in damp paper towels and place in a microwave-safe dish. Microwave at HIGH power 4 to 5 minutes or until crisp-tender. Serve drizzled with oil and vinegar; sprinkle with salt.
