Grilled Chicken Sausage Sandwiches

Ingredients

  • 2 Roma tomatoes, finely chopped
  • 2 Tbsp finely chopped red onion
  • 1½ tsp sugar
  • 1½ tsp apple cider vinegar
  • 1 jalapeño pepper, seeded (if desired) and minced
  • 6 (3-oz) fully-cooked chicken-apple sausages
  • 6 (1.5-oz) hot dog buns (preferably whole wheat)
  • 1½ cups baby arugula

Instructions

  1. Combine tomatoes, onion, sugar, vinegar, and jalapeño in a small bowl; set aside.
  2. Preheat grill to medium-high heat. Grill sausages according to package directions.
  3. Grill buns 2 minutes or until lightly toasted.
  4. Fill buns with arugula; top with sausages and tomato mixture.

Side Dish Ingredients

  • 1½ lb asparagus, trimmed
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp low-sodium soy sauce
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat grill to medium-high heat. Coat asparagus with cooking spray.
  2. Grill 4 minutes or until crisp-tender, turning occasionally. Transfer to a platter.
  3. Drizzle with oil and soy sauce; sprinkle with pepper.
