Grilled Chicken Sausage Sandwiches
Grilled Asparagus
Ingredients
- 2 Roma tomatoes, finely chopped
- 2 Tbsp finely chopped red onion
- 1½ tsp sugar
- 1½ tsp apple cider vinegar
- 1 jalapeño pepper, seeded (if desired) and minced
- 6 (3-oz) fully-cooked chicken-apple sausages
- 6 (1.5-oz) hot dog buns (preferably whole wheat)
- 1½ cups baby arugula
Instructions
- Combine tomatoes, onion, sugar, vinegar, and jalapeño in a small bowl; set aside.
- Preheat grill to medium-high heat. Grill sausages according to package directions.
- Grill buns 2 minutes or until lightly toasted.
- Fill buns with arugula; top with sausages and tomato mixture.
Side Dish Ingredients
- 1½ lb asparagus, trimmed
- 2 Tbsp extra virgin olive oil
- 1 Tbsp low-sodium soy sauce
- ¼ tsp pepper
Side Dish Instructions
- Preheat grill to medium-high heat. Coat asparagus with cooking spray.
- Grill 4 minutes or until crisp-tender, turning occasionally. Transfer to a platter.
- Drizzle with oil and soy sauce; sprinkle with pepper.
