Flank Steak with Peanut Sauce
Apple-Cabbage SlawIngredients
- ½ lb flank steak (or use London broil or boneless, skinless chicken breasts)
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup coconut milk
- 2 Tbsp creamy peanut butter
- 1 tsp lime juice
- 1 tsp low-sodium soy sauce
- ⅛ tsp Sriracha hot sauce (optional)
Instructions
- Preheat grill or grill pan coated with cooking spray to medium-high heat.
- Sprinkle steak with salt and pepper. Grill, covered with grill lid, 4 to 5 minutes per side or until desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, whisk together coconut milk, peanut butter, lime juice, soy sauce, and Sriracha, if desired. Add water, if needed, to reach desired consistency. Serve sauce with steak.
Side Dish Ingredients
- 3 Tbsp olive oil
- 2 Tbsp lime juice
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ (16-oz) pkg tricolor coleslaw
- ½ Granny Smith apple, cut into matchsticks
- ½ cup very thinly sliced red onion (see Note)
- 2 Tbsp chopped fresh mint
Side Dish Instructions
- Whisk together oil, lime juice, salt, and pepper in a large bowl. Add coleslaw, apple, onion, and mint; toss.
