Flank Steak with Peanut Sauce

Ingredients

  • ½ lb flank steak (or use London broil or boneless, skinless chicken breasts)
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup coconut milk
  • 2 Tbsp creamy peanut butter
  • 1 tsp lime juice
  • 1 tsp low-sodium soy sauce
  • ⅛ tsp Sriracha hot sauce (optional)

Instructions

  1. Preheat grill or grill pan coated with cooking spray to medium-high heat.
  2. Sprinkle steak with salt and pepper. Grill, covered with grill lid, 4 to 5 minutes per side or until desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  3. Meanwhile, whisk together coconut milk, peanut butter, lime juice, soy sauce, and Sriracha, if desired. Add water, if needed, to reach desired consistency. Serve sauce with steak.

Side Dish Ingredients

  • 3 Tbsp olive oil
  • 2 Tbsp lime juice
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ (16-oz) pkg tricolor coleslaw
  • ½ Granny Smith apple, cut into matchsticks
  • ½ cup very thinly sliced red onion (see Note)
  • 2 Tbsp chopped fresh mint

Side Dish Instructions

  1. Whisk together oil, lime juice, salt, and pepper in a large bowl. Add coleslaw, apple, onion, and mint; toss.
