Asian Chicken-and-Orange Chopped Salad
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1 (10.6-oz) pkg Asian chopped salad kit
- ½ (16-oz) pkg strawberries, hulled and quartered
- 1 navel orange, peeled and sliced
- ½ English cucumber, cut into half-moons
- ¼ cup fresh cilantro leaves
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Lightly season chicken with salt and pepper.
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until done. Let stand 5 minutes; thinly slice.
- Prepare salad mix according to package directions in a large bowl. Add strawberries, orange, cucumber, and cilantro; toss.
- Divide salad among 2 plates; top with chicken.
