Honey-Glazed Chicken
Roasted Broccoli, Carrots, and Cauliflower
Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil, divided
- 1½ Tbsp honey
- 2 cloves garlic, minced
- 1 tsp ground cumin
Instructions
- Preheat oven to 425°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season chicken lightly with salt and pepper.
- Cook chicken in 1 Tbsp hot oil in a large ovenproof skillet over medium-high heat 3 minutes per side or until browned.
- Combine 1 Tbsp oil, honey, garlic, and cumin; brush over chicken. Transfer skillet to oven. Bake 8 minutes or until done.
