Honey-Glazed Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil, divided
  • 1½ Tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ground cumin

Instructions

  1. Preheat oven to 425°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season chicken lightly with salt and pepper.
  2. Cook chicken in 1 Tbsp hot oil in a large ovenproof skillet over medium-high heat 3 minutes per side or until browned.
  3. Combine 1 Tbsp oil, honey, garlic, and cumin; brush over chicken. Transfer skillet to oven. Bake 8 minutes or until done.

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together vegetables and garlic on large baking sheet; spread in a single layer. Drizzle with oil; sprinkle with salt and pepper.
  2. Bake 20 minutes until crisp-tender.
