Sheet Pan Barbecue Chicken and Sweet Potatoes

Ingredients

  • 2 sweet potatoes, peeled and cut into ½-inch chunks
  • 1 head broccoli, cut into large florets
  • 3 Tbsp olive oil
  • 2 tsp chili powder
  • 2 lb boneless, skinless chicken breasts
  • 1 cup barbecue sauce
  • 3 Tbsp honey
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 425°F. Toss together potatoes, broccoli, oil, and chili powder on a large greased rimmed baking sheet. Spread in a single layer, and season with salt and pepper to taste.
  2. Halve chicken crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  3. Arrange chicken among vegetables; season with salt and pepper to taste.
  4. Stir together barbecue sauce, honey, and garlic; pour over chicken.
  5. Bake 25 to 30 minutes or until chicken is done and vegetables are browned and tender.
